Three assortments of the Greek vineyard work together to produce this variety. The harvester decides on the optimal ripening for each variety.
Moschofilero from the vineyards of Mantineia northeast of Tripoli at an altitude of more than 650m. The lands are poor but well drained. The climate is cold in winter, with a lot of rain in summer and low temperatures. These unique traits of the ecosystem contribute to the slow ripening of the grapes and the production of wines with complex, intense and characteristic aromas with pleasant acidity. Roditis is the most cultivated white variety in the country. We choose semi-mountainous and mountainous vineyards with cold climate, light soils and low production. The grapes grown at these altitudes, give a remarkable aromatic complexity and usually have good acidity and oiliness in the mouth. The slender white muscat offers explosive aromas from end to end in Greece, with a strong presence of the primary aroma of the variety, the delicious condensation and soft acidity.
Distribution of the precursor of each variety separately, pre-fermentation disgorgement, vaccination with selected doughs suitable for each variety, controlled fermentation in stainless steel cooling tanks at 16-17 oC. Mixing of fermented wines.
